Our Story
Nick LoVarco, a fifth-generation butcher, was the original owner of Tom Bailey's Market in Spring Lake. He inherited his passion for butchery from his father, who ran the renowned Gramercy Park Deli for 65 years. Starting at the age of 13, Nick learned the 'Old Tyme' butchery techniques that defined his career. In 2015, Nick founded Mr. Prime in Manasquan, a venture he ran until his passing in 2018.
Today, Nick's son, Joe LoVarco, proudly owns and operates Mr. Prime. Having worked alongside his father for many years, Joe is dedicated to continuing Nick's legacy. He is committed to providing the same quality meats, exceptional service, and unparalleled customer care that made his father a beloved figure in the community.
